The USU Extension Carbon County is hosting a course called Quick & Easy Cooking: Cinco De Mayo on May 17 at 7:00 pm. Castle Country Radio was able to sit down with Assistant Professor in Family and Consumer Sciences, Christina Pay to get all the details.

Although, Cinco De Mayo was earlier in the month the Quick & Easy Cooking Class is going to share some delicious Cinco De Mayo recipes. “Well, we are going to be doing street tacos, I believe we talked about doing sweet pork and also some chicken for the tacos. Then we are also making a tomatillo avocado salsa, which really sounds good to me right now,” said Pay. This will be the last Quick & Easy course as they will be taking a break during the summer months, they plan to resume in October.

“If you haven’t been out to one of our Quick & Easy Cooking Class you need to come or you can watch us live on Facebook live. All the information can be found with you guys or on our Facebook page, Carbon County USU Extension Facebook page,” explained Pay. When you attend the free course in person you get the opportunity to taste test the delicious food.

Not only will you receive instructions on how to make the food items but you will get great conversation topics that you can have with your family as you enjoy dinner. “We want to get families gathered back around the dinner table. So we try to provide recipes that are exactly what we say Quick & Easy and nutritious as well, and then we provide some good conversation to have with your kids or as parents as you’re trying to guide your children. The C.A.R.E. Coalition provides us with some really good conversations from Parent Empowered,” stated Pay. Other Quick & Easy Cooking Class sponsors include Castleview Hospital and Create Better Health.

Mark your calendars for the next Diabetic Cook Along for Type 2 Diabetes that will be held on May 23, May 30, June 6 and June 13. “This one is going to be held during the daytime hours from 10:30 am to 12:30 pm. Lunch will be provided, in fact, you’ll cook your own lunch. We will have all the ingredients and everything there for you. Some great education on how to eat healthy if you have Type 2 Diabetes. We give tips and tricks because that’s not always an easy thing to do,” said Pay. Participants will receive a free diabetic cookbook, as well as a chance to win door prizes and swag. The event will take place at the USU Extension Classroom at 751 East 100 North, Suite 1700.
