Our loving mother, grandmother and sister, Carolyn Sue Westenskow Jensen, age 62, passed away August 23, 2022 at Utah Valley Hospital while surrounded by her family.

She was born June 3, 1960 in Richfield, Utah to Earl and Judy Sutton Westenskow. In 1981, Carolyn married Clifton Elliott in Prescott, Arizona. They later divorced.

Carolyn was a longtime resident of Emery County who worked in home health for many years.  She was excellent at her job and loved taking care of her patients. She loved the outdoors, especially camping, fishing and going for rides. Carolyn loved everyone who put forth any effort to be part of her life. She had many more “children” that were friends to her kids, but she was always mom or grandma to them.

She loved Nascar, and Kevin Harvick was her driver. She looked forward to the day that she would be able to go see the championship race in person. Carolyn loved her music and was a fan of all genres, especially rock. She could be always found with a book, and her love of reading gave her the dream of publishing her own book one day.

The family would like to say thank you to her medical team at Utah Valley Hospital for the love, compassion and care she received during her stay.

Carolyn is survived by her children, Cody (Aspen) Westenskow, Mandy Westenskow (Wyatt), John (Kris) Elliott and Cliffie (Crystal) Elliott; two sisters, Sue Lambert, Donna (Mike) Murphy; and may loving grandchildren and great-grandchildren.

She is preceded in death by her parents; step-father, Reed Lott; son, Matthew Elliott; grandson, Dillon Elliott; and brother, Ted Cowan.

Funeral service, Tuesday, August 30, 2022, 11:00 a.m., Desert Edge Christian Church (500 South Main, Huntington, Utah, 84528), where the family will receive friends one hour prior to the service.
