The USU Extension Carbon County is excited to host their December Quick & Easy Cooking Class: Holiday Breakfast on Wednesday, Dec. 20 at 7:00 pm at the USU Extension Classroom at 751 East 100 North in Price.  Castle Country Radio was able to sit down with Create Better Health Ambassador, Harim Driggs to get all the details.

This month’s recipe will feature a holiday breakfast casserole that you can make for the family Christmas morning. “I think that’s one of the things that are easier to do is the casseroles, and this one is going to be kind of like a Denver casserole with a spin; with spices, I’m going to add so that people, it’s not the typical one,” said Driggs. The event is always sharing healthy recipes with guests.

At each class there is always a special guest that helps cook the meal for the audience and this month’s guests are Eric and Trish Nelson with Trinity Food Pantry. “Yes, this class is like with a live audience and also, we do the Facebook live through the USU Extension site on Facebook and also the Create Better Health. We ask and invite people that come in to the classroom to donate two cans of goods for the Trinity Food Pantry,” explained Driggs. The cooking organizers just wanted to help stock the shelves at the pantry during the Christmas holiday.

Sponsors for the event at USU Extension, Create Better Health, C.A.R.E. Coalition, Castleview Hospital. The C.A.R.E. Coalition always has a topic to discuss during the cooking presentation that helps to open the lines of communication at home. “They are the ones that pop in and while we are doing the cooking demonstration and when I’m doing something, they will talk about this topic and give out tapes to the families to help address these issues,” said Driggs. This month’s topic is Food Insecurity and Substance Abuse in Youth.
