The USU Extension Office, along with Southeast Utah Health Department presents an opportunity for the community to come learn how to manage diabetes symptoms and make appropriate diabetic meals at the Diabetes Cook Along event. Castle Country Radio was able to sit down with Extension Assistant Professor, Christina Pay to get all the details.

“I mean the simplest way to tackle the Type 2 Diabetes is through your diet. If you can learn how or find what you said, a menu or a diet that works for you, that’s the easiest option, diet and exercise and for some reason we find that difficult,” said Pay. This cooking course will teach basic nutrition education to help plan meals and prepare food for people living with Diabetes.

“I think the biggest thing with this class that I would like to get out there is, yes, you can. Yes, you can eat normal foods. Yes, you can eat regular food. We just kind of teach you how to do it to cater to your diabetes so that you’re not getting too many carbs and you’re not getting too much sugar and hopefully, balancing out what you’re eating, so it’s in a healthy way,” said Pay. You will learn some great, easy recipes along with some wonderful cooking tips and techniques with each course.

The cost to participate is only $10.00 and covers the entire 4-week course. “In this particular class we will teach you, again, remind you of what you learn from your Diabetic Educator, as far as basic diabetes education but we will also be doing hands-on preparation of meals that you can eat and prepare at home. So that you have things that you like to eat and to show you also that you can cook this way, it’s not tough, it’s not hard. So that’s probably the two basic things, we give you a basic diabetic education, but we’re also going to let you prepare a meal and eat it while you’re with us, so that you can see that those things are good,” said Pay. All participants will receive a meal during class, a diabetic cookbook and a chance to win some great prizes.

The cooking course will begin at 6:00 pm at the USU Extension Classroom at 751 East 100 North, Suite #1700 on the following days:

January 22, 25 & 29 and February 5
