The USU Extension Carbon County is hosting a course called Quick & Easy Cooking: Lettuce Wraps on March 20 at 7:00 pm. Castle Country Radio was able to sit down with Assistant Professor in Family and Consumer Sciences, Christina Pay to get all the details.

“Quick & Easy Cooking started as a way to show families, and anybody really, that you can create a meal quickly, easily, a nutritious meal and the whole goal is to help families get back to the dinner table and eat dinner together,” explained Pay. Research shows that time around the dinner table each night could help build protective factors in youth and it open those lines of communication between parents & children.

With each course there is a guest chef that has been invited and subject shared by the C.A.R.E. Coalition as the topic of discussion for the evening. “This time we’re talking about dealing with Bullies. We’ll talk about what bullying is and what it isn’t. A lot of people cry bullying when it really isn’t, so we really want to clarify what is bullying, what isn’t bullying. We invited someone who wrote a book about bullying, Cami Carlson from Carbon High School,” stated Pay. Carlson is not only a teacher at Carbon High but she also coaches and is a Spur Award-winning author of children’s books.

Guest Chef, Cami Carlson, along with the evening cooking instructors will help prepare the evening’s meal of lettuce wraps. “We’ll also share some ideas for what you can put as sides with it. So yea, you could build it, and make it more like a taco if you wanted to, but well share ideas for sides to go with it too,” said Pay. The event will take place at the USU Extension Classroom at 751 East 100 North, Suite 1700 at 7:00 pm.

If you wish to participate in the Quick & Easy Cooking course you are urged to register on Eventbrite at https://www.eventbrite.com/ The cost to participate is free and space is limited. “If you want to, it helps us to know how many are going to be there. However, if you just want to show up that’s fine too. We do ask that if you come and you’re able to bring two cans of canned food to donate to the Trinity Food Pantry, because we are partnering with them to help build up their resources,” said Pay.
