The Create Better Health is Utah’s SNAP-Education program that provides nutrition education to low-income individuals and families. Castle Country Radio was able to sit down with Ambassador, Emily Anderson to learn more about the program and its services.

“So Create Better Health is through USU Extension and we go throughout the community, libraries, schools, anybody that will take us, and teach the community, especially those on SNAP-Ed but we’ll teach anybody, how to budget better, how to use their funds they’re getting from the government better, and how to eat healthier, teach them about myplate and those types of things,” stated Anderson. Create Better Health wants nothing more than to increase each participants knowledge of nutrition, cooking, food safety and budgeting.

Each of the elementary schools in the area have an after-school program called Rising Raptors and Create Better Health goes in once a month to instruct students about the importance of good nutrition. “Right now, we’re doing, it’s a curriculum called Food, Fun, Reading and Culture. So we go in, read a book about what ever it is we are teaching that day. We usually cook a little something up for the kids that they talk about in the book and tie it back into myplate, and kids get to try it, they get to help us make it, and they enjoy reading the book with us,” said Anderson.

Create Better Health not only instructs students but they also help host the monthly Quick & Easy Cooking classes for adults. “So we also once a month we are doing a Quick & Easy Cooking show that we do and it’s online or you can come into the extension office. If you come into the extension office you get to try the food, you get to help us out as we demo it. We always have some kind of special guest to be our sue chef. They come in and help us cook, and that’s something else for the community to come do that’s fun,” explained Anderson. The Quick & Easy Cooking classes are free to the public and details of the next class will be shared on the USU Extension – Carbon County Facebook page.
